Fallen leaves and snow blanket the mountains of Hida.

Here and there, tiny buds sleep.

The earth desires fallen leaves as sustenance for the slightest warmth.

Creatures endure a colorless winter with thoughts of a warm, comfortable spring bursting into buds,

faithfully trusting that the time for reawakening will surely come;

believing that time even more abundant than now is coming.

Tanks with lids closed and not deciding for how long.

In the brewery’s corners, they patiently await the right time,

wrapped in an invisible style until transparent drops of sake take on an amber color;

until the sake develops a deep richness that permeates the body with just one sip.

Hope, worry, tension—these thoughts and feelings intertwine over these past 28 years.

Firmly trusting in miracles through the constant murmur of clear flowing water,

brewery workers entrust this sake to the future,

praying for a quality sake perfect for a new age.

TASTE

The aroma is powerful and complex, with caramel, spices, iodine, moist earth, dried shiitake mushrooms, honey, soy sauce, dried fruits and other complex aromas that envelop the entire nose. On the palate it is very elegant, with a pleasant velvety texture that accentuates its elegance, with fullness of softness and umami flavor. In the aftertaste, the moderate acidity and bitterness merge with the sweetness and umami that persists from the attack in a balanced way, and a long and deep aftertaste is felt.

2014 Gold Medal, trophy and champion sake in the koshu category

IWC was Established in 1984, it is one of the most prestigious blind tasting competitions in the world. The sake category has grown dramatically since its inception in 2007, becoming the largest and most influential sake judging event outside of Japan. In 2014, SUIO won first prize in the Sake category and received the highest award among 725 brands.
